Ingredients
2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar (divided)
1 tablespoon unflavored gelatin powder
2 teaspoons vanilla extract
2 cups mixed berries (fresh or frozen)
1 tablespoon lemon juice
Fresh mint leaves (optional, for garnish)
Instructions
1. Sprinkle gelatin over cold milk in a small bowl and let sit for 5–10 minutes to bloom.
2. In a saucepan, combine heavy cream and 1/4 cup of sugar. Heat gently over medium heat until warm and sugar dissolves.
3. Remove from heat, stir in the bloomed gelatin until fully dissolved, then add vanilla extract.
4. Pour into serving glasses or ramekins. Let cool slightly, then refrigerate for at least 2 hours or until set.
5. For the compote, in a saucepan combine berries, remaining 1/4 cup sugar, and lemon juice. Simmer until berries soften and form a syrupy mixture. Cool to room temperature.
6. Spoon compote over the chilled panna cotta. Garnish with mint leaves and additional berries if desired. Serve chilled.
Notes
Chill panna cotta for at least 2 hours, but overnight is best for firmer texture.
You can prepare the berry compote in advance and store separately.
For a vegetarian version, substitute gelatin with agar agar and follow package directions.
