2 cups all-purpose flour

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 cup shredded zucchini (1 medium)

1 cup finely chopped green apple (1 medium)

1/4 cup unsalted butter (for frosting)

1/2 cup brown sugar (for frosting)

2 tablespoons milk (for frosting)

1 cup powdered sugar (for frosting)


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.

2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

3. In a large bowl, beat eggs with granulated sugar and brown sugar until smooth. Add vegetable oil and vanilla; mix well.

4. Fold in shredded zucchini and chopped apple.

5. Gradually stir dry ingredients into wet until just combined.

6. Pour batter into prepared loaf pan and bake for 50–55 minutes or until a toothpick inserted comes out clean. Let cool completely.

7. For the frosting, melt butter in a saucepan over medium heat. Add brown sugar and cook 2 minutes, stirring constantly.

8. Add milk and bring to a gentle boil. Remove from heat and stir in powdered sugar until smooth.

9. Pour warm frosting over cooled bread and let it set for 15 minutes before slicing.

Notes

Lightly squeeze the shredded zucchini to avoid excess moisture.
