Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

1 teaspoon cinnamon (optional)

½ cup unsalted butter, melted

½ cup granulated sugar

¼ cup brown sugar

2 large eggs

1 teaspoon vanilla extract

3 medium ripe bananas, mashed

¾ cup chopped walnuts or pecans

Instructions

1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

2. In a large bowl, mash the ripe bananas until mostly smooth.

3. Add the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well until smooth.

4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

5. Gradually stir the dry ingredients into the banana mixture just until combined.

6. Gently fold in the chopped nuts. Do not overmix.

7. Pour the batter into the prepared pan and smooth the top.

8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.

9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

10. Optionally, top with a brown sugar glaze and additional nuts before serving.

Notes

Use overripe bananas for best flavor and moisture.

Don’t overmix the batter—mix until just combined.

This bread freezes beautifully; wrap tightly and store up to 3 months.
