Ingredients

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 pound ground beef

1 can (14.5 ounces) diced tomatoes

2 tablespoons tomato paste

2 cups beef broth

2 cups medium pasta shells, uncooked

1½ cups shredded cheddar cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, for garnish (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Cook until softened and fragrant.

2. Add the ground beef and cook until browned. Break it apart and drain excess fat if needed.

3. Stir in the diced tomatoes and tomato paste. Mix until well combined with the beef.

4. Add beef broth and uncooked pasta shells. Stir everything together and bring to a simmer. Cover and cook for 10–12 minutes, or until pasta is tender.

5. Reduce heat to low. Stir in the shredded cheddar cheese until melted and creamy. Season with Italian seasoning, salt, and pepper.

6. Garnish with chopped parsley and serve hot straight from the skillet.

Notes

You can substitute the beef with ground turkey or chicken for a lighter version.

To boost the veggie content, add diced bell peppers or spinach when sautéing onions.

Use freshly shredded cheese for a smoother melt—pre-shredded cheese can be grainy.
