Ingredients

450g ground beef

1 medium yellow onion, chopped

2 garlic cloves, minced

1 ½ cups red enchilada sauce

1 can (10 oz) diced tomatoes with green chilies

500g cheese tortellini (fresh or refrigerated)

1 ½ cups shredded Mexican cheese blend

½ cup sour cream

¼ cup fresh cilantro, chopped


Instructions

1. Heat a large skillet over medium heat. Add ground beef and chopped onion. Cook for 6-8 minutes until browned. Drain excess fat.

2. Stir in minced garlic and cook for 1 minute. Add diced tomatoes with green chilies and mix well.

3. Pour in the enchilada sauce and bring the mixture to a simmer.

4. Add cheese tortellini and stir to coat. Cover and simmer for 5-7 minutes until tender.

5. Sprinkle shredded cheese over the top, cover again, and let melt for 2-3 minutes.

6. Remove from heat, top with sour cream and chopped cilantro, and serve hot.

Notes

Use refrigerated tortellini for quicker cooking and best texture.

You can substitute ground turkey or chicken for a lighter version.
