Ingredients
3 cups mashed sweet potatoes
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup melted butter
1 cup packed brown sugar
1/3 cup all-purpose flour
1/3 cup softened butter
1 cup chopped pecans
Instructions
1. Peel and boil sweet potatoes until fork tender. Drain and mash until smooth. You should end up with 3 cups of mashed sweet potatoes.
2. In a large bowl, combine mashed sweet potatoes, granulated sugar, salt, vanilla extract, eggs, and melted butter. Mix until smooth.
3. Spread the sweet potato mixture evenly into a buttered 9×13-inch baking dish.
4. In a separate bowl, mix together brown sugar, flour, and softened butter until crumbly. Stir in chopped pecans.
5. Sprinkle the topping evenly over the sweet potato base.
