Ingredients
2 cups blackberries
1 cup granulated sugar (divided)
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1/2 cup unsalted butter
1 tablespoon lemon juice (optional)
1 tablespoon cornstarch
Instructions
1. Rinse blackberries or use frozen ones directly. Toss them with 1/2 cup sugar, cornstarch, and lemon juice if using. Set aside.
2. In a bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
3. Stir in milk until just combined. Do not overmix.
4. Melt butter in the baking dish by placing it in a 350°F (175°C) oven.
5. Pour the batter over melted butter—do not stir.
6. Spoon blackberry mixture evenly on top of the batter.
7. Bake for 40–45 minutes, or until golden brown and bubbly.
8. Serve warm with vanilla ice cream or whipped cream.
Notes
Use frozen blackberries straight from the freezer—no need to thaw.
Do not stir the batter once poured over the melted butter.
