Ingredients
1 1/2 cups fresh or frozen blackberries
16 oz cream cheese
1 1/2 cups red velvet cake crumbs or 1 red velvet cake layer
3/4 cup granulated sugar
2 tsp vanilla extract
1 cup heavy cream
1 tbsp unflavored gelatin
1/2 cup unsalted butter
3 large eggs
Instructions
1. Preheat oven to 350°F (175°C). Mix butter, sugar, eggs, vanilla, and buttermilk with cocoa powder and red food coloring. Bake the red velvet base in a lined springform pan. Cool completely.
2. Blend blackberries with a bit of sugar and strain to remove seeds. Simmer to thicken and cool. Reserve a few tablespoons for the glaze.
3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time. Fold in some blackberry puree. Pour over red velvet base. Bake in a water bath. Chill.
4. Whip cream to soft peaks. Dissolve gelatin in warm water. Blend with remaining blackberry puree and fold into whipped cream. Spread over chilled cheesecake. Chill until firm.
5. Warm reserved puree with a bit of gelatin and pour over mousse layer. Set completely. Top with whipped cream and blackberries.
