Ingredients
2 tablespoons olive oil
1 medium head cauliflower, cut into florets
1/3 cup buffalo sauce
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
4 large flour tortillas
1 cup romaine lettuce, shredded
1 large avocado, sliced
1/4 cup cilantro, chopped
1/2 cup ranch or herbed yogurt sauce
Instructions
1. Preheat your oven to 425°F (220°C).
2. Toss cauliflower florets with olive oil, garlic powder, and smoked paprika.
3. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway.
4. Once roasted, transfer cauliflower to a bowl and toss with buffalo sauce.
5. While cauliflower roasts, prepare the romaine, avocado, and cilantro.
6. Warm tortillas to make them more pliable.
7. Assemble wraps: layer lettuce, buffalo cauliflower, avocado, cilantro, and drizzle sauce.
8. Fold tightly into a wrap and serve immediately.
