Ingredients

4 cups cubed butternut squash

1 large yellow onion, sliced

3 tablespoons butter (plus more for greasing)

2 tablespoons brown sugar

1 cup breadcrumbs or crushed crackers

1 tablespoon fresh sage, chopped

1 cup shredded cheese (optional)

Salt and pepper to taste

1 tablespoon olive oil (for roasting)


Instructions

1. Preheat the oven to 400°F (200°C). Peel and cube the butternut squash into bite-sized pieces.

2. Toss squash with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes until tender and golden.

3. In a skillet, melt butter over medium-low heat. Add sliced onions and cook for 15–20 minutes until caramelized.

4. In a small bowl, mix breadcrumbs (or crushed crackers) with melted butter, brown sugar, and chopped sage.

5. In a large bowl, combine roasted squash and caramelized onions. Stir in shredded cheese if using.

6. Transfer the mixture to a greased baking dish. Top evenly with the crumb topping.

7. Bake at 375°F (190°C) for 20–25 minutes until golden and crisp.

8. Serve warm and enjoy!

Notes

Roasting the squash first prevents it from getting watery and enhances its natural sweetness.

You can substitute the fresh sage with dried herbs like thyme or rosemary for a different twist.

For added crunch, mix chopped pecans or walnuts into the topping before baking.
