2 cups graham cracker crumbs

24 ounces cream cheese softened

1/2 cup granulated sugar

2 large eggs

3 cups apples peeled and diced

1/3 cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1/2 cup caramel sauce

1/2 cup chopped pecans


Instructions

1. Preheat oven to 350°F and line a 9×13-inch baking pan with parchment paper.

2. In a bowl, mix 2 cups graham cracker crumbs, 1/2 cup melted unsalted butter, and 2 tablespoons granulated sugar. Press firmly into the prepared pan. Bake for 10 minutes and let cool slightly.

3. Beat 24 ounces cream cheese with 1/2 cup granulated sugar until smooth. Add 2 large eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.

4. Spread the cheesecake mixture evenly over the cooled crust.

7. Bake for 35 to 40 minutes until the center is set but slightly jiggly.
