Ingredients
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup granulated sugar
1/2 cup light brown sugar packed
1/2 cup unsalted butter melted and slightly cooled
2 large eggs room temperature
1/2 cup whole milk
2 teaspoons vanilla extract
2 cups peeled and finely diced apples
1 tablespoon lemon juice
1/3 cup light brown sugar for apples
1 teaspoon ground cinnamon for apples
1/3 cup thick caramel sauce
1/2 cup powdered sugar
2 tablespoons milk or heavy cream
1 pinch flaky sea salt optional
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan; line with parchment and set aside.
2. Toss the diced apples with lemon juice, 1/3 cup brown sugar, and 1 teaspoon cinnamon and let them sit while you mix the batter.
3. In a medium bowl whisk together flour, baking powder, salt, 1 teaspoon cinnamon, and nutmeg.
4. In a large bowl whisk granulated sugar, 1/2 cup brown sugar, and melted butter until combined, then whisk in eggs, milk, and vanilla.
5. Stir the dry ingredients into the wet ingredients just until no streaks of flour remain, being careful not to overmix.
6. Spread about one third of the batter into the prepared pan, spoon half of the apple mixture over the top, then repeat layers and finish with the remaining apples.
7. Swirl a knife gently through the batter to marble the apples, then bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
8. Whisk together caramel sauce, powdered sugar, and 1 to 2 tablespoons milk to make a thick glaze, then drizzle over the warm bread before slicing.
Notes
Use tart, firm apples such as Granny Smith so they hold their shape and balance the sweetness of the caramel.
If the top of the loaf is browning too quickly, tent it loosely with foil for the last 10–15 minutes of baking.
Let the bread cool at least 20 minutes before slicing so the crumb sets and the caramel glaze doesn’t slide off.
