Ingredients

1 ½ pounds ground beef

¾ cup breadcrumbs

2 large eggs

1 cup shredded cheddar cheese (plus extra for topping)

¼ cup ketchup

1 tablespoon yellow mustard

1 tablespoon Worcestershire sauce

½ cup finely chopped onion

1 teaspoon salt

½ teaspoon black pepper

⅓ cup ketchup (for glaze)

2 tablespoons brown sugar (for glaze)


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or grease a loaf pan.

2. In a large bowl, combine ground beef, breadcrumbs, eggs, cheddar cheese, ketchup, mustard, Worcestershire sauce, onion, salt, and pepper. Mix gently until just combined.

3. Shape the mixture into a loaf and place it on the prepared pan or in the loaf pan.

4. In a small bowl, mix ⅓ cup ketchup with 2 tablespoons brown sugar. Spread over the top of the meatloaf.

5. Bake for 45–55 minutes, until the internal temperature reaches 160°F (71°C).

6. In the last 5 minutes, sprinkle extra cheddar cheese on top and return to oven until melted.

7. Let rest for 10 minutes before slicing and serving.

Notes

For best results, don’t overmix the meat or it may become tough.

Letting the meatloaf rest before slicing helps keep it moist and intact.

You can prep the loaf in advance and refrigerate until ready to bake.
