Ingredients

2 tablespoons olive oil

1 tablespoon butter

1.5 pounds boneless, skinless chicken breasts or thighs

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 small onion, finely chopped

3 garlic cloves, minced

1 cup long-grain white rice

2.5 cups chicken broth

3/4 cup heavy cream

1 cup frozen peas

2 tablespoons fresh parsley, chopped


Instructions

1. Season chicken with salt, pepper, and paprika.

2. Heat olive oil and butter in a large skillet over medium heat. Sear chicken until golden brown on both sides, then remove and set aside.

3. In the same skillet, sauté onions and garlic until translucent.

4. Stir in uncooked rice, coating it in the aromatics. Add chicken broth and bring to a gentle simmer.

5. Return chicken to the skillet. Cover and simmer on low for 18–20 minutes until rice is tender and chicken is cooked through.

6. Stir in heavy cream and peas. Simmer uncovered for 5 more minutes to thicken.

7. Garnish with chopped parsley and serve hot.
