Ingredients

3 cups cooked shredded chicken

1 cup diced cooked ham or bacon

2 cans condensed cream of chicken soup 10.5 ounces each

1 1/2 cups milk

1 cup sour cream

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried parsley plus extra for garnish

1/2 teaspoon salt or to taste

1/2 teaspoon black pepper

2 cups shredded cheddar cheese divided

2 cans refrigerated buttermilk biscuit dough 16.3 ounces each, cut into quarters

2 tablespoons melted butter


Instructions

1. Preheat the oven to 350°F 175°C and lightly grease a 9×13 inch baking dish with nonstick spray or butter.

2. In a large mixing bowl whisk together the condensed cream of chicken soup, milk, and sour cream until smooth and creamy.

3. Stir in the garlic powder, onion powder, dried parsley, salt, and black pepper until the seasonings are evenly distributed.

4. Fold in the shredded chicken, diced ham or bacon, and 1 cup of the shredded cheddar cheese, then spread the mixture evenly into the prepared baking dish.

5. Open the cans of refrigerated biscuit dough and separate the biscuits, then cut each biscuit into 4–6 small pieces.

6. Scatter the biscuit pieces evenly over the creamy chicken mixture, gently pressing some pieces slightly into the sauce and leaving others on top for crispier, golden bubbles.

7. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the biscuit pieces.

8. Cover the baking dish loosely with aluminum foil and bake for 25 minutes to allow the biscuits to cook through.

9. Remove the foil, brush the tops of the biscuits with the melted butter, and return the casserole to the oven for another 10–15 minutes, or until the biscuits are puffed, deeply golden, and the sauce is bubbling around the edges.

10. Remove the casserole from the oven and let it rest for 5–10 minutes so the sauce can thicken slightly.

11. Sprinkle with additional dried or fresh chopped parsley, slice or scoop into portions, and serve warm.

Notes

For even faster prep, use store-bought rotisserie chicken and pre-shredded cheese.

If your biscuits are browning too quickly, loosely tent the dish with foil for the last part of baking.

To add extra flavor and color, stir 1–2 cups of frozen mixed vegetables or steamed broccoli into the creamy chicken mixture before adding the biscuits.
