Ingredients

450g ground chicken

60g breadcrumbs

30g grated Parmesan cheese

1 large egg

2 cloves garlic minced

2 tablespoons chopped fresh parsley

1 teaspoon lemon zest

0.5 teaspoon salt

0.25 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons unsalted butter

1 cup chicken broth

2 tablespoons fresh lemon juice

2 tablespoons capers drained

Extra parsley and lemon slices for garnish


Instructions

1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, lemon zest, salt, and pepper until just combined.

2. Roll mixture into 1.5-inch meatballs.

3. Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides for about 6–8 minutes. Remove and set aside.

4. In the same skillet, sauté garlic. Add chicken broth and scrape up brown bits. Stir in lemon juice, capers, and butter. Simmer briefly.

5. Return meatballs to skillet, spoon sauce over them, cover, and simmer for 10 minutes until cooked through.

6. Garnish with fresh parsley and lemon slices. Serve hot.
