Ingredients
200g linguine
250g raw prawns, peeled and deveined
3 tbsp olive oil
5 garlic cloves, finely chopped
1 fresh red chilli, finely chopped
1/2 tsp red chilli flakes
150g cherry tomatoes, halved
1/4 cup chopped parsley
Salt and black pepper to taste
Zest of 1 lemon
1 tbsp lemon juice
Instructions
1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente. Reserve 1/2 cup pasta water and drain.
2. In a skillet, heat olive oil over medium heat. Add garlic and fresh red chilli. Sauté until fragrant, about 1-2 minutes.
3. Add prawns, season with salt, pepper, and chilli flakes. Cook 2-3 minutes per side until opaque. Remove prawns.
4. Add cherry tomatoes to the skillet and cook until soft, about 3-4 minutes. Add lemon zest and juice.
5. Return prawns to the pan, add pasta, reserved water, and parsley. Toss and season to taste.
Notes
Don’t overcook the prawns—they only need 2-3 minutes per side.
Add extra chilli flakes for a spicier version.
A splash of pasta water helps bring the sauce together beautifully.
