Ingredients

2 cups chocolate cookie crumbs

6 tablespoons unsalted butter, melted

24 ounces full-fat cream cheese, softened

1 cup powdered sugar

1 1/4 cups heavy cream, cold

8 ounces semi-sweet or dark chocolate, melted and cooled

1 teaspoon vanilla extract

1 cup fresh cherries, pitted

1/2 cup heavy cream (for ganache)

4 ounces semi-sweet chocolate, chopped (for ganache)

2 tablespoons chocolate shavings (optional, for garnish)


Instructions

1. Crush chocolate cookies into fine crumbs and combine with melted butter. Press into the base of a springform pan and chill.

2. Beat cream cheese and powdered sugar until smooth.

3. In another bowl, whip heavy cream until stiff peaks form.

4. Gently fold in melted chocolate and vanilla into the cream cheese mixture.

5. Fold in the whipped cream to create a fluffy chocolate filling.

6. Spread filling evenly over the chilled crust and refrigerate at least 6 hours or overnight.

7. Heat 1/2 cup heavy cream to a simmer and pour over 4 oz chopped chocolate. Stir to make ganache.

8. Pour ganache over the chilled cheesecake and let it drip down the sides.

9. Top with fresh cherries and chocolate shavings.

10. Slice and serve chilled.

Notes

For a firmer crust, bake it at 350°F for 8 minutes before chilling, then let it cool completely.

Use room temperature cream cheese for the smoothest texture.
