Ingredients
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder (preferably Dutch-process)
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
20 white chocolate chunks or truffles (about 1 inch pieces)
1/2 cup powdered sugar (for rolling)
Instructions
1. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
2. In another bowl, beat eggs and sugar until fluffy. Mix in oil and vanilla.
3. Gradually add dry ingredients to wet until a sticky dough forms.
4. Chill dough for at least 1 hour to firm up.
5. Scoop 1 tablespoon of dough, flatten, and insert a white chocolate piece.
6. Seal dough around chocolate and roll into a smooth ball.
7. Coat each ball in powdered sugar generously.
8. Place on a parchment-lined baking sheet.
9. Bake at 350°F (175°C) for 10–12 minutes until tops are crackled.
10. Let cool on the baking sheet before transferring to a wire rack.
Notes
Use high-quality white chocolate for the gooey center — bars melt better than chips.
Chill the dough well to make stuffing and shaping easier.
Cookies can be frozen before or after baking — just reheat to enjoy melty centers.
