Ingredients

1 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 pint vanilla ice cream

1/2 cup rainbow sprinkles


Instructions

1. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.

2. In another bowl, cream together butter, brown sugar, and granulated sugar until fluffy.

3. Add the egg and vanilla extract to the creamed mixture and mix well.

4. Gradually add the dry ingredients into the wet mixture and stir to form a soft dough.

5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

6. Scoop dough into balls, flatten slightly, and bake for 8–10 minutes. Let cool completely.

7. Soften ice cream for 5 minutes, then scoop a generous amount onto a cookie and top with another to sandwich.

8. Roll the exposed ice cream edge in rainbow sprinkles, pressing gently.

9. Place sandwiches on a tray and freeze for at least 1 hour until firm.

10. Store in an airtight container or wrap individually for up to 2 weeks.

Notes

Make sure cookies are fully cooled before adding the ice cream to prevent melting.

Use a cookie scoop for uniform size, which helps sandwiches look and freeze better.
