Ingredients
1 cup water
½ cup unsalted butter
2 tablespoons sugar
¼ teaspoon salt
1 cup all-purpose flour
2 large eggs
Vegetable oil for frying
½ cup sugar (for coating)
1 teaspoon ground cinnamon
Optional: chocolate sauce, dulce de leche, lemon curd (for dipping)
Instructions
1. In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a gentle boil.
2. Once boiling, reduce heat and stir in the flour until a ball forms.
3. Remove from heat and let the dough cool slightly. Beat in eggs one at a time until smooth and sticky.
4. Heat vegetable oil in a deep pot to 375°F (190°C).
5. Transfer dough into a piping bag fitted with a large star tip.
6. Pipe 4-6 inch strips into hot oil, cutting with scissors. Fry until golden, turning occasionally.
7. Remove and drain on paper towels.
8. Mix sugar and cinnamon. Roll warm churros in mixture until coated.
9. Serve with warmed dipping sauces of your choice.

Let the dough cool before adding eggs to prevent scrambling.
Keep oil temperature steady to ensure even frying.
