Ingredients
900g ground beef
1 cup breadcrumbs
2 eggs
1 small onion, finely chopped
2 cloves garlic, minced
3 cups mashed potatoes
1 ½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 tablespoons chopped chives
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Make the mashed potatoes first. Boil peeled potatoes, mash with butter and milk, and season with salt and pepper. Let cool slightly.
2. In a bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, salt, and pepper. Mix gently.
3. Shape the beef mixture into a loaf on a lined baking tray or use a loaf pan. Bake at 375°F (190°C) for 30–35 minutes.
4. Spread mashed potatoes over the meatloaf and bake for another 15 minutes.
5. Sprinkle with cheddar and bacon, then bake for 10 minutes more until bubbly.
