Ingredients

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) creamed corn

1 cup sour cream

1/2 cup unsalted butter, melted

1 box (8.5 oz) Jiffy corn muffin mix


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.

2. In a large bowl, combine drained whole kernel corn, creamed corn, sour cream, melted butter, and corn muffin mix. Stir just until combined.

3. Pour into prepared baking dish and smooth the top evenly.

4. Bake for 45–50 minutes or until golden brown and the center is set.

5. Let cool for 5–10 minutes before slicing and serving.

Notes

For a cheesier version, add 1 cup shredded cheddar to the batter before baking.

To make ahead, mix ingredients and refrigerate unbaked for up to 24 hours.

Use a 9×13 inch pan and double the ingredients to serve a crowd.
