Ingredients
1 large egg yolk
2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
2 teaspoons anchovy paste or 2 anchovy fillets, minced
1 garlic clove, finely grated or minced
1/3 cup neutral oil
2 tablespoons extra virgin olive oil
1/3 cup finely grated Parmesan cheese
Salt and freshly cracked black pepper, to taste
Instructions
1. In a medium mixing bowl, whisk together the egg yolk, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste, and garlic until smooth.
2. While whisking constantly, drizzle in the neutral oil very slowly to create an emulsion. Once it thickens, add the rest of the oil more steadily. Finish by whisking in the olive oil.
3. Stir in the Parmesan cheese. Taste and season with salt and pepper.
4. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
Use room-temperature ingredients for easier emulsification.
