Ingredients
2 pounds Yukon gold potatoes
1 pound ground beef
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6 slices cooked bacon, crumbled
1/4 cup chopped green onions
Salt and pepper to taste
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. In a skillet over medium heat, cook the ground beef until browned. Season with salt and pepper. Drain excess fat.
3. While the beef cooks, boil the cubed potatoes in salted water for about 8-10 minutes, until just fork-tender. Drain well.
4. In a large mixing bowl, stir together the cream of chicken soup and sour cream. Fold in the cooked ground beef.
5. In the greased baking dish, layer the boiled potatoes first. Pour the beef and cream mixture evenly over the potatoes. Sprinkle with cheddar and Monterey Jack cheese. Top with crumbled bacon.
6. Bake uncovered for 25-30 minutes or until the cheese is bubbly and golden. Garnish with green onions before serving.
