Ingredients
8 oz fettuccine
2 ripe avocados
2 cloves garlic
1/4 cup fresh basil leaves
2 tbsp lime juice
1/4 cup extra virgin olive oil
Salt and black pepper to taste
1/4 cup sun-dried tomatoes (optional)
Freshly grated vegan parmesan or nutritional yeast (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
2. While pasta cooks, add avocados, garlic, basil, lime juice, olive oil, salt, and pepper to a food processor or blender. Blend until smooth. Add 1–2 tbsp pasta water if needed to thin the sauce.
3. Return pasta to the pot or a large bowl. Pour the avocado sauce over and toss to coat. Use reserved pasta water to loosen if needed.
4. Stir in sun-dried tomatoes if using. Top with vegan parmesan or nutritional yeast and fresh basil. Serve immediately.
Notes
Make sure the avocados are ripe for the creamiest sauce.
For extra flavor, toss in a pinch of red chili flakes.
Use gluten-free pasta to make this a fully gluten-free recipe.
