Ingredients
20 oz refrigerated cheese tortellini
2 cups heavy cream
1 cup chicken broth
4 oz cream cheese
1 cup freshly grated Parmesan
3 cloves minced garlic
3 tablespoons unsalted butter
salt and pepper to taste
chopped parsley and red pepper flakes for garnish (optional)
Instructions
1. In your crockpot, combine heavy cream, chicken broth, cream cheese (cubed), Parmesan, minced garlic, and butter. Stir gently.
2. Cover and cook on low for 2 hours, stirring halfway through to melt cream cheese and combine ingredients.
3. Stir in refrigerated tortellini. Cover and cook on low for 30–40 minutes, until tortellini are tender.
4. Season with salt and pepper. Garnish with chopped parsley and red pepper flakes if desired. Serve warm.
Notes
For extra protein, add cooked chicken, sausage, or shrimp during the last 30 minutes.
