Ingredients

2 tablespoons unsalted butter

2 tablespoons olive oil

2 large yellow onions, thinly sliced

1/2 teaspoon salt

1 teaspoon sugar

3 cloves garlic, minced

1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

1 tablespoon all-purpose flour

1/2 cup dry white wine

2 cups low-sodium beef or vegetable broth

1 cup heavy cream

1/2 teaspoon black pepper

20 oz cheese tortellini

1 cup shredded Gruyère cheese

Fresh parsley or thyme, for garnish (optional)

Instructions

1. In a large skillet, heat butter and olive oil over medium-low heat. Add onions, salt, and sugar. Cook for 20–25 minutes, stirring frequently, until golden and caramelized.

2. Stir in minced garlic and thyme; cook for 1 minute until fragrant.

3. Sprinkle flour over onions and stir well. Cook for 1 more minute.

4. Deglaze pan with white wine, scraping up any browned bits. Simmer for 2 minutes.

5. Pour in broth and bring to a gentle simmer.

6. Add heavy cream and black pepper. Simmer for 3–4 minutes to thicken slightly.

7. Stir in tortellini and cook according to package instructions (usually 4–5 minutes).

8. Once tortellini is tender, stir in shredded Gruyère until melted and creamy.

9. Garnish with fresh herbs and serve immediately.

Notes

Caramelize onions low and slow for the deepest flavor.

For extra protein, add rotisserie chicken or crispy pancetta.

To reheat, add a splash of broth or cream to loosen the sauce.
