Ingredients

6 slices bacon

3 cloves garlic, minced

1 medium yellow onion, diced

4 cups chicken broth

2 cans (15 oz) white beans, drained and rinsed

1 cup heavy cream

1 cup grated parmesan cheese

3 cups fresh spinach

1 tablespoon olive oil

Salt and pepper, to taste


Instructions

1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside on a paper towel-lined plate.

2. If needed, add olive oil to the pot and sauté diced onions until soft. Stir in garlic and cook for 30 seconds.

3. Pour in chicken broth and bring to a light boil. Add white beans and simmer for 10 minutes.

4. Reduce heat, stir in the heavy cream, and then add fresh spinach. Cook until wilted, about 2–3 minutes.

5. Turn off heat and stir in grated parmesan. Mix until melted and smooth.

6. Season with salt and pepper to taste. Ladle into bowls and top with crispy bacon. Serve hot.

Notes

Use freshly grated parmesan for the best melt and flavor.

Add the cream at low heat to avoid curdling.

For a vegetarian version, skip the bacon and use veggie broth with smoked paprika.
