Ingredients

1 head garlic

2 tablespoons olive oil

8 oz pasta (orecchiette recommended)

1 tablespoon unsalted butter

1 tablespoon all-purpose flour

1 cup whole milk

1/2 cup grated parmesan cheese

1 teaspoon lemon zest

1 tablespoon lemon juice

Salt and pepper to taste

Red pepper flakes (optional)

Fresh parsley (optional)


Instructions

1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30–35 minutes. Cool slightly and squeeze out the cloves.

2. Boil salted water and cook pasta until al dente. Reserve 1/2 cup of pasta water and drain.

3. In a skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Mash in roasted garlic. Stir in flour and cook for 1 minute.

4. Gradually whisk in the milk until smooth. Simmer 3–4 minutes until thickened.

5. Stir in parmesan, lemon zest, and lemon juice. Season with salt and pepper.

6. Toss cooked pasta into the sauce, adding pasta water as needed to loosen.

7. Garnish with red pepper flakes and parsley if desired. Serve warm.

Notes

Use freshly roasted garlic for the sweetest, mellow flavor.

Add a splash of pasta water when reheating to restore creaminess.
