Ingredients
1.5 pounds chicken breasts
1 tablespoon Cajun seasoning
0.5 teaspoon salt
3 cloves garlic, minced
0.5 cup sun-dried tomatoes, chopped
1 cup chicken broth
4 ounces cream cheese, cubed
0.75 cup heavy cream
12 ounces penne pasta
0.25 cup chopped parsley
0.25 teaspoon black pepper
Instructions
1. Place chicken breasts in the bottom of the crock pot. Sprinkle with Cajun seasoning and salt. Add garlic and sun-dried tomatoes.
2. Pour in chicken broth. Cover and cook on low for 4–5 hours until chicken is tender.
3. Shred the chicken in the crock pot using two forks.
4. Stir in cream cheese and heavy cream. Let it melt and mix until smooth.
5. Cook penne pasta in salted water until al dente. Drain and add to the crock pot.
6. Stir everything together until pasta is fully coated in the creamy sauce.
7. Garnish with parsley and black pepper. Serve hot.
Notes
Make sure to cube the cream cheese for quicker melting into the sauce.
To add more spice, include a pinch of cayenne or red pepper flakes.
Stir pasta in just before serving to keep it from getting too soft.
