Ingredients

12 large eggs

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon white vinegar or lemon juice

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 teaspoon paprika (for garnish)

2 tablespoons chopped green onions

Optional edible flowers or microgreens

Instructions

1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then simmer for 10 minutes.

2. Transfer eggs to an ice bath. Let cool for 10 minutes before peeling.

3. Peel the eggs and slice them in half lengthwise. Carefully remove yolks into a bowl.

4. Mash yolks with a fork until fine. Add mayonnaise, Dijon mustard, vinegar or lemon juice, salt, and pepper. Mix until creamy.

5. Transfer the mixture to a piping bag fitted with a star tip or use a spoon. Fill each egg white half with the yolk mixture.

6. Sprinkle with paprika, then top with chopped green onions and optional edible flowers or microgreens.

7. Serve immediately or refrigerate until ready to enjoy.

Notes

Chill the eggs before peeling for easier shell removal.

For an extra tangy flavor, try adding a splash of pickle juice to the filling.

Garnish just before serving to maintain color and freshness of toppings.
