Ingredients

300g chicken breast or thighs

250g lo mein noodles (or spaghetti)

1 red bell pepper, thinly sliced

1 cup snow peas

1 medium carrot, julienned

3 green onions, sliced

2 garlic cloves, minced

1 tsp fresh ginger, minced

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp brown sugar


Instructions

1. Slice chicken and vegetables into bite-sized strips.

2. Boil noodles until al dente, drain, and toss with sesame oil.

3. Stir-fry chicken in a hot pan until cooked, then remove.

4. Sauté garlic, ginger, and vegetables until tender-crisp.

5. Return chicken and noodles to pan, add sauces and sugar, then toss.

6. Garnish with green onions and serve hot.

Notes

You can substitute tofu or shrimp for the chicken.
