Ingredients
12 mini bell peppers
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1 teaspoon garlic powder
2 green onions, finely chopped
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Slice each mini bell pepper in half lengthwise and remove seeds and membranes.
2. In a bowl, mix the softened cream cheese, shredded cheddar, garlic powder, green onions, salt, and pepper until smooth.
3. Fill each pepper half with the cream cheese mixture.
4. Place on a parchment-lined baking sheet and bake at 375°F (190°C) for 15-20 minutes, until cheese is bubbly and slightly golden.
5. Garnish with extra green onions if desired and serve warm or at room temperature.
Notes
For extra flavor, add chopped fresh herbs like parsley or dill into the cheese mixture.
Use pre-shredded cheese to save time, but grating fresh cheese will melt better.
Make sure the cream cheese is fully softened to avoid lumps in the filling.
