Ingredients

1 lb lean ground beef

1 yellow onion, diced

4 cloves garlic, minced

28 oz crushed tomatoes

2 tbsp tomato paste

5 cups low-sodium beef broth

1 tbsp Italian seasoning

1/4 tsp red pepper flakes (optional)

1 tsp salt

1/2 tsp black pepper

8 oz lasagna noodles, broken into pieces

1/2 cup part-skim ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup freshly grated parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

1. In a large pot over medium heat, cook ground beef until browned (5–7 minutes). Drain excess fat.

2. Add diced onion and sauté for 3 minutes. Stir in garlic and cook 1 minute.

3. Stir in crushed tomatoes, tomato paste, beef broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil.

4. Add lasagna noodles. Reduce heat and simmer for 10–12 minutes, stirring occasionally, until noodles are tender.

5. Turn off heat and stir in ricotta until creamy.

6. Serve in bowls, topping each with mozzarella, parmesan, and fresh parsley.

Notes

Use no-boil lasagna noodles for extra convenience—just add them directly to the soup.

For extra protein, stir in a can of white beans or use high-protein pasta.

Make it vegetarian by replacing beef with lentils and using vegetable broth.
