Ingredients
12 lasagna noodles
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound ground beef
2 cups marinara sauce
1 cup ricotta cheese
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
¼ cup chopped fresh basil or parsley
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Boil lasagna noodles until al dente, then drain and lay flat. Cut each in half lengthwise.
2. In a skillet, heat olive oil, sauté onion until soft. Add garlic, then ground beef. Cook until browned. Drain fat.
3. Stir in marinara sauce and let simmer 5 minutes. Season with salt and pepper.
4. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
5. Line each muffin cup with two noodle strips forming an X shape.
6. Spoon in ricotta, then meat sauce, then top with mozzarella and Parmesan.
7. Bake for 20–25 minutes until bubbly and golden.
8. Let cool slightly, garnish with basil or parsley, and serve warm.
