Ingredients
1 cup unsalted butter, softened
3/4 cup powdered sugar, plus more for rolling
1/2 teaspoon peppermint extract
2 drops green gel food coloring (optional)
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup mini chocolate chips
Instructions
1. In a large mixing bowl, beat 1 cup softened unsalted butter with 3/4 cup powdered sugar until light and fluffy (about 2 minutes).
2. Add 1/2 teaspoon peppermint extract and 2 drops green gel food coloring, mixing until evenly colored.
3. Gradually add 2 1/4 cups all-purpose flour and 1/4 teaspoon salt. Mix until a dough forms.
4. Fold in 3/4 cup mini chocolate chips until evenly distributed.
5. Scoop dough into 1-tablespoon balls. You should get 24 cookies.
6. Bake at 375°F (190°C) for 10 minutes on a parchment-lined baking sheet.
7. Cool for 5 minutes, then roll warm cookies in powdered sugar. Once fully cooled, roll again for extra coating.
Notes
For a stronger mint flavor, increase peppermint extract slightly but don’t overdo it.
These cookies freeze well for up to 2 months.
