Ingredients
300g okra (bhindi), sliced into 1-inch pieces
1 large onion, thinly sliced
2 tablespoons oil (mustard oil or neutral oil)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon salt (or to taste)
1 teaspoon lemon juice or 1/2 teaspoon amchur (optional)
Instructions
1. Wash the okra and dry thoroughly with a kitchen towel. Trim the ends and slice into 1-inch pieces.
2. Heat oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds.
3. Add sliced onions and sauté until golden brown.
4. Increase heat to medium-high and add the okra. Spread it out evenly and let it sear undisturbed for 4–5 minutes.
5. Stir gently, then add turmeric, red chili powder, coriander powder, and salt.
6. Continue cooking, stirring occasionally, until okra is tender and lightly crisp, about 5–7 more minutes.
7. Turn off the heat and finish with lemon juice or amchur if desired. Serve hot with rice, naan, or roti.
Notes
Always dry okra completely before slicing to prevent sliminess.
For a spicier version, add a pinch of garam masala or extra red chili powder.
To make it tangier, amchur powder or fresh lemon juice works beautifully at the end.
