Ingredients
1 pound ground beef
1 cup long-grain white rice
2 large yellow onions, thinly sliced
2 tablespoons butter
2 cups beef broth
1 tablespoon Worcestershire sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded Gruyère or Swiss cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. In a skillet over medium heat, brown the ground beef until fully cooked. Season with salt and pepper. Drain any excess fat and set aside.
2. In the same skillet, melt butter and add sliced onions. Cook on medium-low for about 20 minutes, stirring occasionally, until caramelized and golden.
3. While onions are cooking, prepare the rice using beef broth instead of water. Cook according to package directions.
4. Preheat oven to 375°F (190°C). In a greased casserole dish, layer the cooked beef, then the rice, then top with caramelized onions.
5. Combine shredded mozzarella and Gruyère, then sprinkle over the casserole.
6. Bake uncovered for 15–20 minutes, or until cheese is melted and golden.
7. Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For added richness, you can deglaze the onions with a splash of white wine.
Use freshly shredded cheese for the best melting texture.
Brown rice can be used instead of white rice, but increase broth and cooking time accordingly.
