Ingredients

1 1/4 cups all-purpose flour

1/2 cup unsalted butter, cold and cubed

1/4 cup granulated sugar

1 large egg yolk

1 1/2 cups whole milk

3 egg yolks

1/3 cup granulated sugar

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 cup strawberries, halved

1/2 cup blueberries

1/2 cup raspberries

1/2 cup blackberries

1 kiwi, peeled and sliced

1/2 banana, sliced

1/2 cup pineapple chunks

1/4 cup apricot jam

2 tablespoons water


Instructions

1. In a bowl, mix flour and sugar. Cut in the butter until crumbly. Add egg yolk and mix into a dough. Chill for 30 minutes.

2. Roll the dough and press into a tart pan. Prick the bottom and blind bake at 350°F (175°C) for 15–20 minutes until golden. Let it cool.

3. For the custard, heat milk until warm. In another bowl, whisk egg yolks, sugar, and cornstarch. Gradually add warm milk while whisking.

4. Return mixture to the saucepan and stir on medium heat until thick. Remove from heat and stir in vanilla. Cool completely.

5. Spread cooled custard evenly in the cooled tart crust.

6. Arrange fresh fruits in patterns over the custard layer.

7. In a small saucepan, heat apricot jam and water until melted. Strain if needed.

8. Brush the glaze over fruits gently for shine.

9. Chill tart for 1 hour before serving.

Notes

Make sure the custard is fully cooled before assembling the tart to prevent sogginess.

Use firm, ripe fruits to maintain texture and shape on the tart.

You can substitute apricot jam with peach or apple jelly for the glaze.
