Ingredients

1 lb beef stew meat

2 cups bowtie pasta (farfalle)

3 tablespoons butter

4 cloves garlic, minced

2 cups beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons chopped fresh parsley (optional)


Instructions

1. In a large pot or deep skillet, melt butter over medium-high heat. Add beef stew meat, season with salt and pepper, and sear until browned on all sides. Remove and set aside.

2. In the same pot, add a bit more butter if needed, then sauté the garlic for 30 seconds until fragrant.

3. Return the beef to the pot. Add beef broth, bring to a simmer, cover, and cook for 25–30 minutes until beef is tender.

4. Add the bowtie pasta directly to the pot. Cook uncovered, stirring occasionally, until pasta is al dente and most of the broth is absorbed.

5. Reduce heat to low. Stir in heavy cream, cheddar, and Parmesan until melted and creamy.

6. Garnish with parsley and extra Parmesan if desired. Serve hot.

Notes

Sear the beef in batches if your pan is small—overcrowding lowers the temperature and stops browning.

Add the cream off the heat to prevent curdling and preserve the sauce’s silkiness.

For extra richness, stir in a tablespoon of cream cheese at the end.
