Ingredients
450g chicken breast
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 carrots, julienned
1 cup broccoli florets
1 medium onion, sliced
3 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon cornstarch
2 cups cooked white rice
Instructions
1. Slice the chicken into thin strips and chop all vegetables evenly. Mince the garlic finely.
2. In a bowl, mix soy sauce, garlic, water, and cornstarch until smooth to form your sauce.
3. Heat oil in a skillet or wok over medium-high. Cook the chicken until browned and cooked through, then remove.
4. In the same pan, sauté onion, carrots, peppers, and broccoli for 4–5 minutes until crisp-tender.
5. Return chicken to the pan. Add sauce and stir until everything is coated and the sauce thickens.
6. Serve hot over cooked white rice. Drizzle sesame oil and garnish with fresh herbs if desired.
Notes
For extra tenderness, marinate chicken in a teaspoon of soy sauce and cornstarch before cooking.
Swap white rice for brown rice or quinoa for extra fiber.
Add chili flakes or sriracha for a spicy kick.
