Ingredients
2 chicken breasts
3 garlic cloves, minced
1 cup Parmesan cheese, freshly grated
1 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
8 ounces pasta (rotini or penne)
1/2 cup cherry tomatoes (optional)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown and cooked through. Remove and let rest before slicing.
2. Boil pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain.
3. In the same skillet, melt butter and sauté minced garlic until fragrant. Pour in heavy cream, stirring frequently.
4. Add grated Parmesan cheese and stir until melted into a smooth, creamy sauce. Use reserved pasta water to thin if needed.
5. Add cooked pasta to the sauce and toss until fully coated. Slice the chicken and place over pasta.
6. Sprinkle with parsley and halved cherry tomatoes if using. Serve hot.
Notes
For a lighter version, substitute heavy cream with half-and-half.
