Ingredients
1 lb green beans
1/2 cup crumbled feta cheese
1/4 red onion, thinly sliced

2 tablespoons olive oil
1 tablespoon lemon juice

salt and black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Add the green beans and cook for 2–3 minutes until just tender. Immediately transfer them to a bowl of ice water. Drain and pat dry.
2. In a large bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3. Add green beans to the bowl along with red onion, sun-dried tomatoes, dill, and feta. Toss gently to combine.
4. Let the salad sit for at least 10 minutes before serving. Enjoy chilled or at room temperature.
