Ingredients
1 lb ground beef
2 medium sweet potatoes peeled and diced
1 small onion chopped
2 cloves garlic minced
1 cup diced tomatoes canned or fresh
2 cups spinach or kale chopped
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika or chili powder optional
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3–4 minutes until soft.
2. Stir in minced garlic and cook for 30 seconds until fragrant.
3. Add ground beef and break it up with a spoon. Cook until browned and fully cooked, about 6–8 minutes. Drain excess fat if needed.
4. Add diced sweet potatoes and stir to combine. Let cook for 5 minutes to begin softening.
5. Pour in diced tomatoes. Cover the skillet and reduce heat. Simmer for 10–15 minutes, stirring occasionally, until sweet potatoes are fork-tender.
6. Add spinach or kale and cook until wilted, about 2 minutes.
7. Season with salt, pepper, and paprika or chili powder if using. Stir well and adjust seasoning to taste.
8. Serve warm, optionally over rice, quinoa, or with a fried egg on top.
