500g ground beef

3 medium potatoes, peeled and diced

1 cup tomato sauce or crushed tomatoes

1 medium onion, diced

3 cloves garlic, minced

1 small bell pepper, chopped (optional)

1 teaspoon ground cumin

1 teaspoon paprika

Salt to taste

Black pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro, chopped (for garnish)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic. Sauté until soft and fragrant.

2. Add ground beef, breaking it up with a spoon. Cook until browned and fully cooked.

3. Stir in cumin, paprika, salt, pepper, and bell peppers. Sauté for 2 more minutes.

4. Add diced potatoes and tomato sauce. Stir everything to combine well.

5. Reduce heat to low. Cover and simmer for 20–25 minutes, stirring occasionally, until potatoes are tender. Add a splash of water if needed.

6. Taste and adjust seasoning. Garnish with chopped parsley or cilantro and serve hot.

Dice the potatoes evenly to ensure they cook at the same rate.

Stir occasionally while simmering to prevent sticking.
