Ingredients

2 cups shredded cooked chicken

6 cups chicken broth

1 cup chopped carrots

1 cup chopped celery

1 medium onion, chopped

2 cloves garlic, minced

4 tablespoons butter

1/3 cup all-purpose flour

1 cup milk or cream

1 teaspoon baking powder

1 1/4 cups all-purpose flour (for dumplings)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes.

2. Add garlic and cook for 1 more minute until fragrant.

3. Sprinkle flour over vegetables and stir well. Gradually pour in chicken broth while stirring to avoid lumps. Simmer until thickened slightly.

4. Stir in shredded chicken and milk or cream. Season with salt and pepper. Let it come to a gentle simmer.

5. In a bowl, mix 1 1/4 cups flour, baking powder, salt, and milk. Stir until dough forms.

6. Drop spoonfuls of dumpling dough into the simmering stew. Cover with a lid and steam for 15 minutes without lifting the lid.

7. Check dumplings are cooked through. Sprinkle with fresh parsley and serve hot.

Notes

Don’t overmix the dumpling dough or it may become dense.

You can use leftover turkey instead of chicken for a fun twist.

Add peas or corn for extra veggies and color.
