Ingredients
1 cup warm water (110°F)
2 1/4 teaspoons instant yeast
1 teaspoon granulated sugar
2 tablespoons olive oil
1 teaspoon salt
2 1/2 cups all-purpose flour
4 tablespoons unsalted butter
4 cloves fresh garlic, minced
2 tablespoons fresh parsley, chopped
Grated Parmesan cheese (optional)
Instructions
1. In a large mixing bowl, combine warm water, instant yeast, and sugar. Let sit for 5 minutes until foamy.
2. Add olive oil, salt, and flour to the yeast mixture. Mix into a shaggy dough.
3. Knead on a floured surface for 8 minutes until smooth.
4. Place in an oiled bowl, cover, and let rise 1 hour until doubled.
5. Punch down dough and divide into 16 pieces. Roll into ropes and tie into knots.
6. Place on a lined baking sheet and let rise 30 minutes.
7. Preheat oven to 400°F and bake for 12–15 minutes until golden.
8. Melt butter in a saucepan, add garlic, sauté for 1 minute, then stir in parsley.
9. Brush warm knots with garlic butter and sprinkle with Parmesan if desired.
Notes
For extra fluffy knots, don’t skip the second rise.
Garlic butter should be brushed on while knots are hot.
Make ahead and freeze baked knots for up to 2 months.
