Ingredients
1 tablespoon active dry yeast
1 teaspoon sugar
1 1/4 cups warm water
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
Instructions
1. In a large mixing bowl, combine the warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.
2. Add the flour, salt, and olive oil. Mix until dough forms.
3. Knead on a floured surface for 8–10 minutes until smooth and elastic.
4. Place in an oiled bowl, cover, and let rise for 1 hour or until doubled.
5. Punch down the dough, divide into 8 equal pieces, and roll into 1/4-inch thick circles.
6. Heat a skillet over medium-high heat. Cook each pita 1–2 minutes per side until puffed.
7. Wrap cooked pitas in a clean towel to keep warm and soft.
Notes
Make sure your skillet is hot enough to help the pita puff up.
Use freshly milled flour or sift if your flour is dense.
Don’t overcook; remove as soon as puffed and lightly golden for soft texture.
