Ingredients

2 pounds whole carrots

3 tablespoons unsalted butter

3 tablespoons honey

3 garlic cloves, minced

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (optional)


Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.

2. Peel the carrots and trim the ends. Slice in half lengthwise if thick. Spread them on the baking sheet.

3. In a small saucepan, melt butter with olive oil over low heat. Stir in minced garlic for 1 minute. Add honey and stir. Remove from heat.
